Crispy Sweet Potato Fries

My husband is not a fan of sweet potatoes. Like at all. Not even mashed sweet potatoes that are drowning in butter and topped with a toasted marshmallow topping during Thanksgiving. He just doesn't like them. He does like french fries though. I decided to try turning some sweet potatoes into fries to see if they would win him over. He wasn't crazy about them, but I did see him grab a few without me forcing him to.
That's a step. :) I, on the other hand, LOVED them!

First, cut your sweet potatoes into strips. Not too thin, but not too thick either. Put them in a bowl and fill it with cold water. Soak them for about an hour. Take them out and pat dry. Very dry.


 Using a large Ziploc bag, dump in a couple tablespoons of cornstarch. (The cornstarch helps pull out the moisture so they don't end up soggy. Works awesome for regular potatoes, too!) Throw your dry potatoes in next. Seal and shake it up. You want to lightly, but evenly, coat your potatoes. Spread them out on a cookie sheet.


Pour a couple tablespoons of olive oil over your potatoes and mix them up to coat. Sprinkle on a little salt. Spread out evenly. Try not to let them touch each other. Bake at 450 degrees for about 10 minutes. Flip and bake for another 5 minutes until crispy. (Watch them closely. The edges burn pretty quickly if you're not careful.)


 There you have it. Crispy sweet potato fries!
