Peanut Butter & Cinnamon Granola

Whew! Tony is almost done with this semester and I am SO excited! Not only will I get to spend more time with my hubby, I will also have more access to the computer to blog. Gotta say, I'm really looking forward to both. :)

I've been waiting to post so many projects that my phone keeps telling me my internal storage space is low. It's okay, phone...I'll take care of that now. 

I'm starting off the week (or ending it, if you prefer) with a quick, yummy (and only 5 ingredient!!) granola recipe. It's a peanut buttery, crunchy granola with a hint of cinnamon. It's a great granola to snack on, eat as cold cereal with milk, or even use it to sprinkle on top of a fruit & yogurt parfait! (See my Crock Pot Yogurt post for an easy yogurt recipe!)



Preheat oven to 325 degrees.
Combine peanut butter and honey and microwave until melted. Stir well.


Add cinnamon and vanilla. 


Stir.


Add oats and stir.


Be sure it's mixed well.


Spread mixture onto a greased cookie sheet and bake, stirring occasionally, for 15-20 minutes until granola is browned. 
(If you have more time, you can also turn the oven lower and leave the door cracked open and let it bake for a couple of hours.)


Let cool completely. (Granola will get crunchier as it cools.)

4 Tbsp. creamy peanut butter
4 Tbsp. honey
1/2 tsp. ground cinnamon
1/2 tsp. vanilla
2 c. old fashioned rolled oats

Mix it in with nuts and dried fruit for a healthy and delicious trail mix, too! 
Tony loves having a small bag of trail mix in his backpack for snacking at school.
