Tuna Mac Salad



In a previous post (CHECK IT OUT HERE), Renae mentioned that the Matts are "pickers".  I find it hilarious when each "kid" (note: the baby is 22), fork in hand, is standing by the counter eating away at this tuna mac salad.  We usually make a triple batch of this recipe when the family comes to visit and there is never any left by the time they leave.  It is great because everyone loves it and it is also one of those salads that gets better the next day. Also, it easily lasts up to a week.  This is such an easy, yummy, fast recipe and I definitely suggest adding it to your recipe box. :)

1 lb. box rotini noodles 
(my mother in law uses the bow noodles but my husband likes "how the Miracle Whip gets in the spirally noodles." I think he's cute! :)
8 oz. sharp cheddar cheese- cut is small chunks
3 cans of tuna- drained
1 granny smith apple- cut in small chunks
Approximately 15-20 oz Miracle Whip (more or less, depending on your preference) 

As mentioned above, this salad is better the next day.  If it is a little dry the following day, just add more Miracle Whip. :)


1. Prepare noodles according to the box. After cooking the noodles, rinse them with cold water until cool.  I like to put a bigger bowl under the colander and fill it will cold water to make sure the noodles are good and cold when you are ready for them. Strain.

2. Strain tuna well. 



3. Put Miracle Whip in a large bowl.  Add tuna. Stir. 


4.  Add diced apples.  


5.  Stir well. 


6.  Add chunks of cheese.  Stir well. 


7.  You can eat immediately but I think it is better after it's been in the refrigerator for a while. :)
